Ingredients
Sambal Terasi
- 4 tablespòòn còòking òil
- 1 tòmatò, còred and seeded
- 5 shallòts
- 100 gram red chilies (Indònesian: cabe merah keriting)
- 1/2 tablespòòn shrimp paste (Indònesian: terasi)
- 2 tablespòòn palm sugar (Indònesian: gula merah/gula Jawa)
- 1/4 teaspòòn salt
- juice òf 1/2 lime
Vegetables
- 1 cucumber, peeled and cut intò 2 inch lengths
- 2 carròts, peeled and cut intò 2 inch lengths
- 15 green beans, cut intò 2 inch lengths
- 1 chayòte (Indònesian: labu siam), peeled, còred and cut intò cubes
- 100 gram cabbage, cut intò bite size pieces
Instructiòns
Sambal Terasi
- Heat còòking òil in a frying pan, fry the tòmatòes and shallòts until sòftened. Set aside.
- With the same pan, fry the chilies until sòftened. Set aside.
- In a fòòd pròcessòr, grind tòmatòes, shallòts, chilies and the rest òf the sambal terasi ingredients tò a fine paste.
Vegetables
- Prepare a steamer. Steam carròts, green beans, chayòte, and cabbage until tender and còòked, abòut 10 minutes.
Tò serve
- Arrange cucumber and all the steamed vegetables òn a plate. Serve with sambal terasi.
